Bruschetta with Gorgonzola and Marscapone

I’m sharing something vaguely different, but still very much food and recipe-related this week!

Confession: I went to a culinary school open house at the beginning of last month and now I also want to go to culinary school. Obviously there’s no way I’ll ever be able to finagle this during residency, but I wonder if it’s something I can do someday? Far off into the distance?

The Promise Culinary School was started in 1997 as an extension of Elijah’s Promise, and offers vocational programs in both Culinary Arts and Baking & Pastry Arts.  There’s a day program and a bilingual (English/Spanish) evening program for the Culinary Arts program and a day program for the Baking & Pastry Arts program.

Food tastings were involved! I usually don’t even like gorgonzola or cheddar cheese, but this bruschetta and frittata were super delicious!

All three programs offer the ServSafe certification to allow students to work within the food industry, and have their students acquire externships, and they also help with job placement assistance.

There are a bunch of ways for students to qualify for financial assistance! Students may qualify for full tuition ($4250-4500) assistance in a variety of ways, as there are funds available to assist youth, veterans, unemployed, disabled or displaced workers.

Elijah’s Promise also started a catering business in 1998 and offers healthy meals to kids in the area and to the community’s elderly and homebound through the Meals on Wheels program. (EP is also the soup kitchen that my favorite food truck in the world–Soupervan–used to donate a meal to for every meal that you bought from them! I miss that food truck so much. :'( )

Bruschetta with Gorgonzola and Marscapone

Bruschetta with Gorgonzola and Marscapone

Servings: 4 servings

Ingredients

  • 4 tbsp extra virgin olive oil
  • 5 cloves garlic finely minced
  • 2 pints red grape tomatoes halved lengthwise
  • 1 tbsp balsamic vinegar
  • 16 whole fresh basil leaves
  • 1 whole baguette or crusty loaf
  • 2 tbsp gorgonzola or Roquefort cheese
  • 2 tbsp marscapone cheese
  • finely ground sea salt
  • freshly ground black pepper
  • pea sprouts for garnish

Instructions

  • In a small skillet, heat the oil over medium-high heat. Add garlic + stir, lightly frying for ~1 minute until golden. Pour the garlic + olive oil into a mixing bowl and allow to cool slightly.
  • Add the tomatoes, balsamic + basil to the bowl. Sprinkle with salt + pepper. Toss to combine. Taste and add more basil + salt as needed. Cover and refrigerate for ~1 hour.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Brush olive oil onto the bread and grill until golden brown.
  • Mix cheeses and spread onto the bread, then give the tomato mixture a final stir and spoon onto the bread.
  • Top with pea sprouts and serve.

I love how we can dream, I am sort of doing the same thing…I was a CPA in corporate world then became mom and now putting my passion for fitness (I always dreamed I’d be a trainer!) into action..I’m a group fit instructor, online trainer, and will start in person training this winter! don’t give up on those far out there ideas…you never know!

  5. This is one appetizer I’d treat as a meal – this sounds wonderful – so tasty – love the basil garlic flavored tomatoes with the crisp baguette and the cheese mix!

  7. Haha, if only we had neverending free time. I feel you on wanting to go to culinary school because I want to do the same. There are SO many university courses I wish I had the time to take – a skills I wish I had the time to master!

    In an ideal world I’d be a writer, blogger, recipe developer, graphic designer, social media manager and photographer (all things I currently do) who ALSO dabbled in interior design, psychology, teaching, culinary arts AND medicine. Oh and somehow had time for family and friends too :P

    1. I wish!!! There are a billion university courses I really wish I’d had the chance to take too (I did a whole blog post on em’, and that list I made was definitely not even close to complete, haha). If only!
