Biscoff Twix Popcorn

And on to the rest of this post! I’ve been massively souping up plain popcorn these days. While this may not be the healthiest of treats, it could definitely be way, way worse, and this is absolutely delicious. Sometimes, you just gotta have that cookie [butter]. The recipe was adapted from here!

As medical students, we’re very cheap frugal, so we seldom buy candy or any food items that aren’t really necessary. Back when we were living by the school, our not-so-healthy candy/snack stashes most often came from the president’s office.

If you are lucky enough to that you still had the chance to go trick or treating a couple weeks ago (or if you have kids to *cough* borrow *cough* some candy from…), here’s another way to enjoy your Twix candy bars! :D

 Biscoff Twix Popcorn

Ingredients:

  • 1/2 cup unpopped popcorn kernels
  • 1 tbsp coconut oil
  • 1 1/2 heaping tbsp Biscoff cookie spread (or cookie butter!)
  • 8 fun-sized Twix bars, coarsely chopped
  • 1/8 cup white chocolate chips
  • 1/8 cup semi-sweet chocolate chips

Instructions:

  1. Heat the coconut oil in a large pot on medium-high heat (~6-7/10, if your stovetop happens to have numbers).
  2. Pour in the popcorn kernels and cover with a lid, leaving a tiny bit of space to allow it to vent.
  3. Coarsely chop the Twix bars.
  4. Pour the chocolate chips into a microwave-safe bowl, and when the popping starts to slow down, heat it up for 30-second increments until mostly melted.
  5. Remove popcorn from heat and pour into large bowl. Stir the melted chocolate in and toss/mix to coat evenly.
  6. Pour in the Twix pieces and toss to mix!
