I’m sorry that this doesn’t look appetizing, but here’s to using up every single part of the beet! (The actual beet was used for a salad.) Waste not, m’friends! Despite the way it looks (here’s where I insert my spiel about how you don’t judge a book by its cover…), it was really tasty (and healthy!). :] I mainly enjoyed these in a pita pocket with a smoked jalapeno cheese spread and turkey sausage. :]
Beet Greens Scramble
Ingredients:
-6 eggs
-1/4 cup unflavored, unsweetened soy milk
-stalks + greens from 2 beets, chopped
~1 tbsp kickin’ chicken seasoning
-freshly ground black pepper
-EVOO
Instructions:
1) Beat together the eggs, milk and seasonings in a bowl.
2) Heat a drizzle of EVOO up in a pan and add the egg mixture.
3) Stir in the chopped beet stalks and greens and cook for ~3-5 minutes, stirring occasionally to prevent sticking.
4) Serve hot!
