So I finally turned on my oven and made…doughnuts! :D
Once upon a time (about a month ago), I went apple picking at Terhune Orchards with two of my fellow co-interns. It’s rare that we get to hang out and apples are also one of my favorite fruits, so it was a super fun break! :D
Our other two co-interns unfortunately couldn’t come because they were working, so I promised I’d bring back treats for them, and that I did, in the form of apple cider doughnuts! I left each of them a doughnut + a pack of vanilla creme brûlée hot cocoa in the call room so they’d have something sweet to look forward to at the end of their long day. :]
I started craving them again the following week, so I decided to make my own! This recipe has a vegan option as well! Just check the “additional notes” section! ;P If you want to “frost” them with a healthier frosting, try the frosting from my Pumpkin Spice Cupcakes!
Baked Apple Cider Doughnuts
Baked Apple Cider Donuts

You'll Need...
- 3/4 cup whole wheat pastry flour
- 1/4 cup coconut sugar
- 1/2 tsp baking powder
- 1 tsp cinnamon
- sprinkle of sea salt
- 1/4 cup apple cider
- 1 large duck egg*
- 2 tbsp vanilla soy milk (or your choice of milk)
- 1 tbsp coconut oil**
- 1/4 tsp vanilla extract
Directions
- Preheat oven to 375 degrees.
- Add flour, sugar, baking powder, cinnamon, and salt to a large bowl and whisk to combine.
- In a separate bowl, whisk together the apple cider, egg, soy milk, coconut oil, and vanilla extract.
- Pour wet ingredients into dry ingredients and gently mix until just combined.
- Portion evenly into a 6-count doughnut pan and bake for 8-10 minutes, or until it passes the toothpick test.
Additional Notes
*Coconut oil solidifies at room/cooler temperatures so that made mixing this a little more difficult, but they turned out fine!
**Vegan option: Sub in a flax or chia egg by combining 1 tbsp ground flax seed or chia seeds with 3 tbsp water. Let it congeal into an egg-like texture before adding it in!

Funny story. My husband and I went to a restaurant that has that same ring game. I couldn’t get the ring on the hook. My husband, who happens to be a physics teacher, gets it on, like, the second try. I’m certain it was rigged.

Sad thing about TX is there are no places to pick apples where I live :(
I grew up down the road from an orchard in PA, and I really miss going to pick them!
But at least I can get them at the store haha :)

I have to say, I love living in the South, but I do wish we had apple orchards for Fall adventures like the one you had. I LOVE apples. One of my favorite fruits as well – I just wish we had an orchard to go to!

I’ve been to the apple orchard many of times growing up in Michigan, but I have NEVER actually picked apples. I guess I only went for the cider donuts. :)
