What is fall without an awesome apple recipe? With the weather cooling down and everything, I figured a warm breakfast oatmeal recipe would be perfect. :D This was adapted from ohsheglows!
It’s somewhat of a calorie bomb, but the ingredients are good for you and it keeps you full forever! I actually split this over the course of two breakfasts since my appetite isn’t all that wonderful way early in the morning, but have at it!
Apple Pie Oatmeal

466 calories, 72g CHO’s, 14g fat, 18g protein. 32g sugar, 421mg sodium, 16g fiber!
- 1/3 cup rolled oats
- 1 1/4 cups organic vanilla soy milk (or your choice of milk)
- 1 medium gala apple, chopped
- 1/2 unsweetened applesauce
- 1 tbsp chia seeds
- 1 tbsp ground cinnamon
- 1/4 tsp ground ginger
- 1 tbsp walnuts, coarsely chopped
- dash of sea salt
Instructions:
- In a small pot over medium heat, whisk together the rolled oats, apple, chia seeds, applesauce, milk, cinnamon, ginger and salt.
- Heat over medium heat for ~8 minutes, stirring often, until mixture thickens and liquid is absorbed.
- Pour into a bowl and sprinkle with chopped walnuts and a pinch of cinnamon.

Yes indeed! You could throw in an egg into a pot with the other ingredients, or a scoop of vanilla (or whatever flavor you think would go with this, haha) protein powder! :]

haha, I’m kinda of the belief that apples go with almost anything, so that sounds good to me! :P
I am trying to include more chia seeds in my diet. I totally might tweek this and give it a try, it sounds wonderful.
