Welcome to Foodie Friday! I’m trying to go back to weekly recipes since I have so many that have been sitting on the backburner for ages. We’ll see how long I’m able to keep this up, but today, it’s gonna be these Air Fryer Roasted Vegetables!
Fun fact–our oven died some time ago so I’m really glad we still have an air fryer! (To be more accurate, it’s not actually dead, but it doesn’t know how to turn off anymore unless we shut off power to the entire house, so…yeah. Guess I won’t be participating in quarantine-baking anytime soon. I guess it’s just as well because Mossy #2, my sourdough starter, died in the move from NJ back to CA.)
About a month before shelter in place was in existence, my friends and I hiked Mount Tam (will get to that somewhere next year as my road trip posts are gonna take up all of this year and part of 2021…) and went to a restaurant in Sausalito called Fish. (Spoiler alert: their food is amazing. AMAZING.)
We were especially inspired by their Brussels sprouts, which led us to decide to try experimenting with my air fryer for the first time. Since the restaurant’s kinda far from us, we someday hope to recreate their version of them, but today is not that day. In time, m’friends, but in the meantime, you get an assortment of roasted vegetables instead!
Air Fryer Roasted Vegetables
Air Fryer Roasted Vegetables
Equipment
- air fryer
Ingredients
- sliced/diced vegetables we used ~2 cups rainbow carrots, 1 cup broccoli, 1 cup mushrooms, 1 cup Brussels sprouts
- extra virgin olive oil
- freshly ground black pepper
- sea salt
Instructions
- Preheat your air fryer to 360 degrees.
- Add vegetables into a bowl and toss with extra virgin olive oil and desired seasoning to coat.
- Line air fryer basket with parchment paper and arrange vegetables* in the basket.
- Cook for 10 minutes**, stirring every 5 minutes.
Notes
- *Try to avoid letting them touch! Gotta socially distance your veggies too. Although obviously not six feet. A couple millimeters will do.
- **If you're cooking more firm vegetables (e.g. sweet potatoes, carrots, etc., cook for 15 minutes!
P.S. If you want to get more fancy (we only used salt/pepper), you can try adding smoked paprika, Italian seasoning, etc.! We decided to keep it simple this time around!
End-of-Week-ish Recap!
- Come join me virtually to explore the Rim Rock to Uplands to Oak Flat Loop Trail in Black Canyon of the Gunnison National Park for this week’s Travel Tuesday!
- It’s my birthday week! I’m working this weekend, but any suggestions for what I should do for my #quarantinebirthday (weekend)?

I love my veggies and will have to try this recipe in our Ninja Foodie. Thank you for sharing!
Yay! I hope you like it!
Such a great idea! I have used the air fryer for potatoes and brussel sprouts but that’s it so far. I’m definitely going to experiment with other veggies, especially broccoli!
Ooo, I need to use it for potatoes! I’ve been craving those lately! :P
We have an air fryer we don’t use much except for my oldest son who loves to make french fries ;) I’ll have to give this a try!
haha, I’m with him on the fries (I haven’t made those yet but…coming right up maybe this weekend! :P )! I hope you like these! :D
AHH, I’ve been hearing about this air-fryer for awhile now and I need to get it! :)
Let me know what you think! I usually never eat fried things so I never thought to get one, but it’s been fun experimenting with this! :P
And just like that, I think I need an air fryer. We got one for my parents, but never for ourselves. They love it, especially, because my stepdad loves fried food and this makes it so much healthier for him.

I love that we can healthify recipes with this! I need to do more experimenting, but let me know what you think if you end up getting one! :]
I love roasted vegetables. We usually have roasted vegetables twice a week.
They’re so good! I need to make em’ more often!
I have an airfryer, but never thought of using it to make roasted vegetables. What a great idea, love it!
Yay! Hope you like it if you try it out! :D
This was a quick reminder that I really need to get an airfryer. These veggies look great and easy.

These look so delicious!! Love veggies, and they come out so good in the air fryer.
Thank you! :] I need to make more soon!
Hmmm, I don’t have an air fryer. Is it worth it to get one when I have everything else except that? We have a much smaller kitchen now that we moved into a new place as well. In any case, I normally don’t like roasted veggies but your recipe makes them look delish.
Ahh, that’s a hard one. If you like fried foods and want a way to make healthier versions of em’, I think it’d be worth it! Otherwise, having a small kitchen and less space for storage makes it harder and might add to the clutter/having even less space, if you’re not going to be using it much. You can always roast in the oven! :]
I should start thinking about investing in a air fryer! Seems that it is way faster than oven. Thank you for sharing this recipe!
It’s definitely faster than the oven! I feel like I’ve been using the air fryer more because of that! :P
Making me wonder why I don’t own an air fryer!

I didn’t for the longest time! :P
I really want to invest not an air fryer now. I never heard of them before. It sounds like such a healthy alternative to regular fat frying.
I’ve just begun using an air fryer. Can’t wait to try this recipe out! Looks so good!!!
Ooo, yay! It’s so convenient! :D I hope you like this!

This looks so tasty and easy! I love my air fryer and I’m always looking for more uses for it. Thanks for sharing!!
Me too! My mom got it last year and loves it–I’m still trying to work on using it more, but this is one of my favorites! :]
Thanks for the recipe my air fryer is just occupying valuable real estate in my kitchen! Now I know how to put it to work and extract my pound from it.
These sound like a great way to begin!

haha, right!? That counter space is precious! :P I’m working on trying to use my kitchen contraptions more too!
LOVE LOVE LOVE the beautiful medley of vegetables you used. But even more so, the fact you resorted to simple seasonings to let the vegetable flavors shine is a really big plus in my house too! olive oil, salt and pepper :D yum.
Thanks! :D The veggies were so good on their own that I figured keeping it simple would be best! :]!
Argh — I need to get an air fryer, stat! These look amazing.

They’re so awesome! If no air fryer though, roasting is super good as well! (Will just take longer!)
