I’ve been wanting to try making my own fudge since the start of my coconut oil stockpiling, but never got around to it until now…in the form of this 3 ingredient chocolate peanut butter fudge!

If I’m to be quite honest, I’ve been really lazy/uninspired to cook lately, but I’ve finally kindasorta snapped out of it! I blame part of this laziness on the fact that I’m finishing up my intern year(?!?)–I think I’ve seen about 250-ish patients in the office since I started residency–the next time I step into the office, it’ll be as a PGY2 (Post-Graduate Year 2)/senior resident!

My super awesome “hubby” recently sent me a birthday present through the mail + I’m now the proud owner of ramekins (at long last!)! It’s so nice to have more than one dish in the apartment! ;P

What’s awesome about this recipe is that it’s super customizable! I was contemplating throwing in coconut flakes and dried fruit but figured I’d keep it simple this time around, and what better classic combination is there than chocolate + peanut butter?

I used Barleans coconut oil and Chocolate Silk Greens to make this (no, this isn’t a sponsored post :O just sharing the love because I adore their stuff!), and am definitely looking forward to doing some experimenting with this recipe (e.g. different dried fruits, nut butters, etc.)!

3 Ingredient Chocolate Peanut Butter Fudge

Course: Dessert
Cuisine: American

Servings: 12 pieces

Ingredients

  • 1 cup peanut butter
  • 5 tbsp coconut oil melted
  • 4 scoops Barleans Chocolate Silk Greens

Instructions

  • Combine all ingredients until smooth and pour into a loaf pan lined with aluminum foil (or candy mold).
  • Freeze for ~2 hours or until firm, then cut into squares and serve!

Notes

Be sure to keep the leftovers refrigerated!

  2. Fudge is SO good. I love to bite off little pieces and let it melt in my mouth. So thankful God made the cacao bean. :) It’s a pretty awesome little bean that makes some amazing food.

  6. I’ve never made fudge but I’ve always wanted to. I had no idea fudge was so easy to make. I love the addition of Peanut Butter.

  9. Never heard of this chocolate “greens” thing but it sounds very interesting. We attempted to make mint fudge here a few months ago but something must have been wrong because it never really set as fudge, although it was still minty and chocolate so not a total loss…but I’m going to have to figure out how to make actual fudge with ingredients available here…

    1. I hope your experimenting goes well! The chocolate greens powder I have has a cocoa powder base along with different fruit/vegetable powders! :] (I pretty much just taste the chocolate though, so it’s lovely in smoothies and apparently also fudge!)
