Much as I love my residency program and [most of] what I’m doing, it’s always hard to come back to work after vacation.
I was super glad to get to see friends I hadn’t seen in 1-2 years. Unfortunately, it passed by way too quickly! :[ It was great to visit with Linda, my church friends both in Lewisburg + Ashland, as well as a few of my friends from BJJ!
I haven’t actually gone to BJJ since I broke my hand last March, so this was the first time I rolled with anyone, and I’m happy to report that I haven’t quite forgotten everything! Shannon was surprised that he couldn’t choke me out or arm bar me! I kept finding a way to escape, so I consider this a victory in itself because he’s super strong. (Was definitely reallyyy sore the next day though!)
I got to catch up with Kyle for lunch at Suplex Tacos (my favorite eatery in Ashland–Pollo Asado Friiiiiess [healthified version here!]!) before we had to leave. He told me something really sweet:
“Some people come and go through the academy and it doesn’t make much of a difference whether or not they’re there, but you really made a difference. We’ve really missed having you there, and I’m glad you came back to visit.
I’ve really, really missed it there too. Part of why I haven’t found another place to train = I got too spoiled at PCMAA. They were like a second family, and it’s just not the same anywhere else. :[!
But I suppose I’ve digressed enough–onward to this week’s recipe! Linda had a package of buckwheat noodles in her pantry that I recognized from my last trip to Please Save A Cat about a year ago, so I suggested we make something with em’!
15 Minute Soba Noodle Soup
15 Minute Soba Noodle Soup
Ingredients
- 2 bundles of soba noodles
- 1 1/4 cups water
- 2 cups bone broth
- 1 pack frozen vegetable mix
- 2 hard-boiled eggs halved
- shichimi red pepper mix optional
- furikake seasoning optional
Instructions
- Bring a pot of water to boil and cook the soba noodles until al dente (~5 min). Drain
- and set aside into two separate bowls.
- In another pot, bring bone broth + water to a boil and add the vegetables. Boil for ~1-2 minutes, or until cooked.
- Add 2 egg halves to each noodle bowl, then add the soup + vegetables.
- Top with sesame seeds and furikake (if desired).

Soba noodles are my absolute favorite! They`re so light and not heavy. I love them.
