Back to the Dinner Table: After the hustle and bustle of the holiday/vacation season, August is the time many families get ‘back to routine.’ Show us your favorite recipe to help families get ‘back to the dinner table.’ It might be a favorite family recipe from your childhood that you’ve ReDuxed; or maybe it’s your family’s current favorite. Let’s all gather back at the table!
I loved this month’s Recipe ReDux theme (see past ReDuxes here!), but…here’s the thing–I haven’t had a chance to see my family in almost a year, and likely will not until late December of this year, because what are vacations when you’re in medical school? (I’m also the only one that cooks much, but let’s conveniently forget about that for the moment!)
While I’ve been out here, I got adopted into a couple other families who stand in for me since my own family is across the country! <3 If you’ve been here for a while, you’ll know that I live at a cat shelter when I’m not off on my rotations. (I should really start referring to it as a farm so people will stop giving me weird looks…)
Since both of us are always so busy, we rarely ever actually sit down to eat, but the level of fanciness + tastiness of food (and whether or not there’s company around) tends to dictate where we end up eating.
If it’s just us two, we’ll often be found standing in the kitchen and eating (in some instances, we sit on the kitchen floor; don’tjudgeus), or sitting in the living room couches with the dogs and a couple cats piled on us. On the other extreme (e.g. someone’s birthday/we have company/we have super fancy food), we’ll actually eat at the dining room table.
There’s also a happy medium!
If it’s a beautiful summer day and there is extra-delicious food to be had, we’ll sometimes sit on the coca cola table outside and watch our duckies frolic in their pool. :D This is one such Coca-Cola-table meal! <3 In keeping with last month’s theme of Fresh From The Garden, we used fresh tomatoes, cilantro, and jalapeno from the garden to make this!
While we snack on awesomeness, the dogs like to roll around and eat each other. <3
Wanna learn how to make this? :D It’s a wonderful crowd-favorite and can be used as a delicious appetizer, or…you could just eat it for dinner, like we did. <3
Orange Roughy Ceviche
Orange Roughy Ceviche
Ingredients
- 1 lb. orange roughy diced
- 1 avocado chopped
- 4 large limes juiced
- 4 roma tomatoes chopped
- 1 large red onion diced
- 1/4 cup cilantro freshly diced
- 1 jalapeno diced
- tortilla chips
Instructions
- Add all ingredients (other than the chips) to a giant ziploc bag and let sit overnight in the fridge.
- Serve on tortilla chips the next day!

I confess… I’ve never made ceviche at home. But this is the perfect recipe to start with!

I live far from my family, too, so I consider so many of my friends as part of my family now. I’ve never had ceviche and am so curious, but I’m a vegetarian so I don’t think it’ll be happening anytime soon! It sounds like such a refreshing summer dish!

Darn, that would make it rather difficult–I saw some recipe for tofu ceviche on the internets! Maybe that could be a good substitute! :O
