Pineapple Chicken Quesadillas

It might be a little hard to believe that I used to hate cheese (everything other than mozzarella, because hello, pizza!)..but there definitely was a time where I wouldn’t touch it! (Other than with the aforementioned pizza. :O )

True, I still don’t enjoy it in massive quantities, but everything in moderation, right? I’ve gotten way more tolerant of it, and will even go as far as to say that I actually enjoy many types (e.g. swiss, goat, Parmesan, ricotta, cottage).

Hawaiian pizza has always been one of my favorite types of pizzas–but really only for the pineapple, since it traditionally includes ham, which I cannot actually consume. :O When we’re ordering out, I usually give all the ham bits to friends, and when I make my own, I like to sub in chicken instead of the ham. :]

I’m still half-convinced that at some point in my childhood, I had a terrible experience with moldy cheese or something of the sort, and my mind is very helpfully blocking that memory out for me, but earlier this year, I even managed to come up with recipes using sharp cheddar that I actually liked (e.g. Hot Dates From Farrah)! That was seriously an amazing feat in my book. :O I made it for church friends a couple weeks later, and they liked it so much that they made a vegetarian version for church potluck the following weekend! :] (‘Twas well-received by everyone!)

So with all that in mind, making a grilled cheese sandwich (of sorts, because I’m such a rebel) is definitely not quite as difficult on me as it might have been even about a year ago. I am forever on my mission to finish off the things in my pantry/kitchen, so this concoction fit the bill! :] Hope you enjoy! It’s only 5 ingredients, and super quick + easy! (Someday, I hope to venture into making my own whole wheat wraps from scratch, but today is not that day!)

Pineapple Chicken Quesadillas

Ingredients:

  • 1 can of shredded chicken
  • 1/4 – 1/2 cups fresh pineapple, diced
  • 1-2 oz. pepper jack cheese, sliced (or to taste)
  • whole wheat wraps
  • sweet chili sauce, to taste

Instructions:

  1. Mix the chicken, pineapple and sweet chili sauce together in a bowl and divide evenly into each wrap.
  2. Add cheese and fold each wrap in half.
  3. Cook on Foreman grill for ~3-5 minutes on each side.
  4. Drizzle with sweet chili sauce (if desired) and serve!

  2. Ahhh I love cheese! But I am also picky with it since I prefer if it is not melted or hot. :) I will eat it though! I love how you make all these new-to-me combinations since you are trying to get rid of all your food with your move. I would have never thought of adding that sweet chili sauce! :)

    1. Ah, pineapple on pizza! I love Hawaiian pizza solely for the pineapples, but always had to pick out the ham, so this is my solution! :P

  6. Sweet spicy savory is always a win for me. I usually use cottage cheese and or laughing cow cheese in my grilled cheeses. For alex, though I layer it on and tell him to just take a Lactaid pill lol

    1. I feel like this was probably at least partially inspired by Hawaiian pizza! They always make it with ham, so I can’t have any, so I had to take matters into my own hands! :P

  11. I LOVE cheese, most kinds anyway. Lol. All I wanted when I was a kid and my mom when grocery shopping was string cheese. More recently I am all about the goat cheese.

    This recipe sounds yummy, it’s making me hungry and I still have at least another hour before lunch, lol. I never thought to mix pineapple and chicken together in a quesadilla but this sounds absolutely delicious! Thanks for sharing your awesome recipes as usual :)

  20. GENIUS! I’ve never had canned chicken…wonder how that is, cause if it’s good/not salty, I need it in my life since I’m forever bringing my own food everywhere, and canned chicken = no cooking :)

    1. For the kind I have (I got it from Costco), there’s 270mg sodium per 2 oz. of chicken. I usually drain it as best as I can, and I think it’s great in chicken salad, or anything that calls for shredded chicken! :]!
