Hummus-Stuffed Grilled Bacon-Wrapped Chicken Strips

Why hello! I’m back with another Recipe ReDux starring…hummus, with thanks to the Sabra #TwoSpoons Tailgating Recipe Challenge!

So, fun fact. Despite graduating from college 5 years ago, I actually only recently (…as in this year, don’tjudgeme) discovered what tailgating was (not by experience). But considering my aversion to partying and alcohol, I guess that was only to be expected. I’m very interested in sports medicine, but my sports of choice are all individual sports (gymnastics, MMA), so I don’t spend much time with sports teams unless my preceptor happens to be the team physician for one(!) or random awesome opportunities arise.

But I digress. These days, I’m all about portable foods because I am essentially homeless and moving all across the country (yay) every couple o’ weeks. Hummus makes my life way more convenient because it makes for a super portable + healthy snack when I pair it with baby carrots or some other kind of vegetable!

Just two tablespoons of hummus per day fulfills your bean requirement for the week, and there’s a gram of protein in each tablespoon of hummus! Find out more about the health benefits of hummus!

Apparently, grilling tends to happen at these mystifying tailgate parties that I’ve never been to, but since most of my med school friends that I spent much of my first two years cooking for because I didn’t want them to die of malnutrition, I figured I couldn’t go wrong with wrapping something in [turkey] bacon.

I chose to stuff chicken strips with hummus (I used Sabra’s Roasted Garlic Hummus, but a lot of their other flavors would work really well too!), since it’s more affordable, and also threw in some diced veggies!

This recipe makes 5 servings, with each serving consisting of 2 bacon-wrapped chicken strips. :] If you want to add to its portability, you can wrap it in lettuce or in a whole wheat hot dog bun (or both)!

Hummus-Stuffed Grilled Bacon-Wrapped Chicken Strips

Ingredients:

  • 10 skinless, boneless chicken tenderloins
  • 10 strips turkey bacon
  • 1/2 cup soy sauce
  • 1 tbsp garlic powder
  • 1 tbsp freshly ground black pepper
  • 1/2 cup + 2 tbsp Sabra Roasted Garlic Hummus
  • 1 roma tomatoes, diced
  • 1/2 green bell pepper, diced
  • 10 whole wheat hot dog buns (optional)
  • 5 lettuce leaves, halved (optional)
  • drizzle of Sriracha sauce (optional)
  • 10 wooden* (or metal) skewers

Instructions:

  1. Put chicken tenderloins in a Ziploc bag along with the soy sauce, garlic powder, and pepper. Let it marinate for 30 minutes.
  2. Wrap turkey bacon strip diagonally around each chicken tenderloin and skewer through to hold in place.
  3. Grill chicken to internal temperature of 165 F.
  4. Remove from heat and let rest, covered (so it’ll stay moist), for 5 minutes.
  5. Cut slit in center of each piece of chicken and stuff with 1 tbsp hummus.
  6. Top with diced tomatoes and green bell peppers.
  7. If desired, wrap each chicken strip with half a leaf of lettuce and a hot dog bun and drizzle with Sriracha for an extra kick.
  8. Enjoy!

*Note: If using wooden skewers, soak in water to prevent them from burning!
