This, my friends, is why I love weekends. I generally have a bit more time so my breakfasts have a chance to get all fancy! (Otherwise, I generally just have oatmeal, which is also tasty, but…it’s hard to compare when guacamole gets involved.)
I love this toast like no other. Especially with the really awesome bread that was on sale at Shop Rite. <3 <3 <3 I don’t actually have a picture of just the toast alone because I couldn’t be bothered to wait to separate it for a picture. (That’s when you know it’s super good, right?!)
So…yeah, you’ll just have to bear with me.
Guacamole Toast
Ingredients:
- 1 avocado, mashed
- 2 slices of whole wheat bread
- 1/4 onion, thinly sliced
- 1/2 tomato, diced
- freshly ground black pepper, to taste
- sprinkle of sea salt
- garlic powder, to taste
- onion powder, to taste
- chili powder, to taste
Instructions:
- Mash the avocado and add salt, pepper, garlic, and onion powder.
- Dice some tomatoes and thinly slice some onions (raw).
- Add chili powder if you want it to be slightly spicy.
- Toast bread and spread avocado mixture on it. Top with tomatoes & onions and serve.
I paired it with some over-easy eggs and turkey sausage in the making… *-*
The last addition to this delicious breakfast = fried potatoes!
So basically, life is good. :D

Looks wonderful! Unfortunately the Guacamole Toast would be enjoyed by just two in my house. My 19 year old son and I are the only lovers of the green yuck, as my youngest calls it, and I might find myself pigging out on the toast before he was awake. I can’t wait to try this.
