Guess what, everyone?! I’m now certified to insert/remove Nexplanons! Our Friday conference consisted of a workshop where Merck brought in a bunch of practice kits for us to learn/go over how to counsel patients on this long-term birth control option and of course, how to put em’ in and take em’ out!
They also brought us Panera because yay for sustenance and learning minds! We had some leftovers, so I pilfered it since I can’t stand to see food go to waste.
This back story is all just to illustrate how I managed to get an entire French baguette (+ a giant platter of mixed salad and 2 sandwiches) for free.
I don’t usually buy fancy loaves of bread on my own because I pinch pennies like nobody’s business (thanks, med school), but when it’s given to me? Entirely different story!
It worked out well because I needed to meal prep this weekend! Sandwiches + salad? Soup with bread? The possibilities are endless! Life is good.
I hadn’t made salad in a while and one of my favorite salads out there is chicken salad, but I’m not the biggest fan of mayonnaise. :/

…So I was pretty overjoyed to find out that Sabra had come out with new spreads! I’ve been a fan of their hummus for quite some time, and their new spreads are primarily made of cooked chickpeas, non-GMO soybean oil, and tahini!
They come in three flavors:
- Garlic Herb
- Honey Mustard
- Sea Salt & Cracked Pepper

Since I’m generally cooking for just one, I tend to cook in bulk to save time. This is super easy to whip up huge portions of in almost no time, and I just store it in my fridge and finish it off throughout the week!

Garlic Herb Chicken Salad Sandwich
Garlic Herb Chicken Salad Sandwich

You'll Need...
- 1 can of cooked, shredded chicken breast
- 1/4 cup Greek yogurt
- 2-3 tbsp Garlic Herb Sabra spread
- 1/4 cup dried cranberries
- 1/2 medium apple, diced
- 2 tbsp hemp hearts
- 1-2 tbsp green onion, thinly sliced
- 1 tbsp red onion, diced
- 8 1" slices of French bread
- drizzle of EVOO
Directions
- Combine the chicken, Greek yogurt, garlic herb spread, cranberries, apple, hemp hearts, green + red onions, and mix until well combined.
- Heat grill pan on medium heat.
- Drizzle extra virgin olive oil on each slice of bread and place each slice of bread oil-side-down on the grill pan. Let cook for 2-3 minutes.
- Top each slice of bread with chicken salad mixture. Serve with fresh apple slices or salad.
Additional Notes
This is great for a quick n' easy recipe to make in bulk so you have enough to last the week!

Chicken salad is always so good! I still eat a sandwich everyday for lunch…except Saturdays…otherwise…I’m a sandwich lover!

Weren’t the spreads so good? I also featured the Garlic Herb one. This chicken salad is right up my alley- I love that you incorporated apples and dried cranberries and of course I’m all about the Greek yogurt :)

Indeed they were! I was between featuring the garlic herb or honey mustard–it was hard, haha. They were all so good (+ yay for Greek yogurt! :P )!
YUM! I’m not a fay of mayo either. But this recipe sounds delicious, especially with those Sabra spreads! I want to try the Honey Mustard one the most. Congrats on your new certification!

First and foremost, my favorite sandwich is the Moons over my Hammy from Denny’s. It’s basically an egg and ham with cheese sandwich on sourdough.
Second, I don’t know exactly what Nexplanons are, or if I should ever know, but it sounds like a solar system. Like the Nexplanons quadrant or “past the Nexplanon galaxy.”

I don’t think I’ve ever tried that, but…sourdough! I recently acquired a sourdough starter so I have been all about the sourdough recipes! (Except that they’ll pop up early next year because yay for scheduling things ahead of time…)
Nexplanon = a long-term implantable form of birth control that you insert into a patient’s arm! :O I like your take on it though, hahaha.

Chicken salad ‘salads’ are a favorite in my house too. I like to use plain greek yogurt with just 1 tbs mayo for a little flavor. I’ll have to check out sabra’s spreads. :)
