Salmon Burgers

Welcome to our weekly Foodie Friday link up! I’m linking up with Annmarie from the Fit Foodie Mama, Esther from Chocolate Runner Girl, and Jess from Hello To Fit, to create awesome healthy recipes each week! This week’s theme = Burgers!

If you don’t care about my life, you can just skip to the recipe down below! :O

As per usual, I’m detouring to update you on the mess that is my 4th-year schedule.

Thank you so much to everyone for keeping me in your thoughts last week! My school’s legal department didn’t get back to me, so my rotation got cancelled. I’m scrambling to find a rotation on super-short notice and no one is responding.

LIFE IS PEACHY.

Like with everything else in life, however, there are still lots of things to be thankful for.

#1: I will not in fact be homeless next week!

I was pretty amused when Abby mentioned how nonchalant I seemed about potentially being homeless. I owe this to the fact that med school has forced me to roll with the punches and to not get worked up over little things.

One of the guys who was going to be moving in is planning to try driving here during his first week, so I get to stay in the student house! I guess I won’t have to sleep in the car and shower at the gym!

#2: The program I lost my rotation at opened up a spot for me in November.

They said they don’t usually do this, but given the circumstances, they’re going to try to make it happen! If it works out, I’d still get to rotate and interview there, and I could potentially see my family for Thanksgiving?!? (It’s been a year since I’ve seen them.)

Fingers crossed that the legal department responds to me by then. At this point, they’ve had over half a year to do so, but alas. ;_;

#3: All my recommendation letters are in! (I don’t know which ones to send in though.)

We’re allowed to send a maximum of 4 in. I have 3 for FM (1 outpatient, 1 inpatient, 1 = my dean), so I’m having issues deciding which of the 3 I have left to use for that last slot! Since we waive our rights to read the actual letter, I can only go off general impressions to figure out which one’s the strongest one.

Surgery?

Internal Medicine?

  • I reallyy liked working with my IM preceptor too–he does a lot of the things that I really hope to incorporate into my future practice, and I feel like we got along really well. His patients kept thinking I was his daughter(??), and he wrote this on my eval: “Excellent work ethic. Hard worker. Keen learner.”

Pediatrics?

  • I adored this rotation as well. I got along with my preceptor super well, and he was all sorts of awesome! I have no comments to share for this one though because I have this suspicion that my school lost the original grade sheet, so they didn’t input the comments. (I saw him writing things in the “Overall Strengths” section, but there’s nothin’ on my actual rotation report.

Which one to choose!?

#4: Yay for interviews! <3

‘Nuff said! :]

Alright! Thanks for listening to me ramble! Here’s my recipe for salmon burgers! :D

Salmon Burgers

Ingredients:

  • 2 6 oz. cans Alaskan pink salmon
  • 3 small eggs (fresh from the farm!)
  • 1/4 cup ground chia seeds
  • generous 1/4 cup red onions, diced
  • generous 1/4 cup mixed bell peppers, diced
  • freshly ground black pepper, to taste
  • garlic powder, to taste
  • cayenne pepper, to taste

Instructions:

  1. Mix all ingredients together and form into patties.
  2. Place onto Foreman grill and let cook for ~5-7 minutes.
  3. Top with guacamole, hummus, cole slaw, spring mix…sky’s the limit!

I had Wholly Guacamole’s Guacamole with Spicy Pico de Gallo on hand, so I topped em’ off with that! :D

    1. I know, right?! That’s one less thing to worry about…

Salmon is definitely my favorite seafood, hehehe! <3

  9. I love salmon burgers, but I always buy! Never even occurred to me to try making my own. These look so delicious that I just might have to give them a try!

    1. I’ve never tried store-bought salmon burgers, but they do look super good! I was trying to use up a bunch of stuff in my apartment, so out came these! :P

  10. First, those salmon burgers look awesomesauce. Second, I’d go with the surgery letter because: (a) you’re right, surgery is not similar to family medicine — but I think that shows your adaptability/diverse skill set (and I’d say that it actually is relevant, since family doctors do minor procedures), (b) surgeons are perceived as being hard to impress so a good letter from one carries some weight, and (c) as you said, his offering the letter without you having to ask for it means it’ll be heartfelt! So I’d pick that one…but honestly, just go with what feels right :) Tough decisions eh!

    1. I heart you. <3 Thanks so much for that perspective--I super super appreciate it! I didn't think about it like that, the hard-to-impress part never crossed my mind because all the surgeons I've worked with thus far (*knocking on wood furiously*) have been super down-to-earth, friendly, and all-around awesome people. :D I will definitely use that one for at least some of em' (unless the program is super peds-heavy or IM-driven ;P)!

  11. These look delicious!! Salmon burgers and avocado, a win for sure!

    1. Thanks, Shashi! <3 I figure since I've done all there is that I can do about it, it'll do me no good to stress about it even more! :o I hope your weekend is treating you well!

  15. Your salmon patties look so good! I’ve only done them with the salmon, egg, breadcrumbs. I’ll have to try and spice them up like yours now!

  19. Crossing my fingers for you regarding the rotation! And well, there’s still a lot of positive things going on it seems :) So I’m sure that one will work out as well.

I’ve never actually tried salmon burgers, but since I’m moving towards a vegetarian diet, not sure I ever will ;-) They look great tho!

    1. Thank you! I really hope it does! I guess the fact that there’s seriously nothing I can do on my end is helping me to not stress out as much about it, so there’s that!

Hehehe, that makes sense! :P If you come across any super amazing vegetarian burger recipes, let me know! :D!

  20. “roll with the punches”–I can understand that. We definitely have to live like that as expats, too–we actually just finally got our new work visas in our passports this week…and we would have had to leave the country by next week if those visas hadn’t gone through…so it’s been an interesting time of just expecting that everything would work out even though it hadn’t yet worked itself out. Bureaucracy can be…slow…right?
I’m not a fan of fish except when it’s a little spicy and not overly fishy. Somehow I imagine I would actually really like these salmon burgers…maybe it’s the generous dollop of guacamole that’s convincing me…
    Rachel G recently posted…Stress-Free, Mess-Free PreschoolMy Profile

    1. They can be indeed (quite unfortunately!). I’m glad you got your new work visas though!! That must have been really stressful too!

I’m of the belief that guacamole makes everything in life better! :P

I would definitely go with surgery. I have never heard of anyone offering the gift of their time (as in taking time to write the letter), if they were not going to say super nice things. Good luck!

Your salmon burgers look super yummy!

Omg I love salmon but havent been able to get fresh in a while, so this looks like a great way to make some of the canned alaskan salmon that I just bought at costco! Thanks so much for the idea! :)

    1. I adore salmon as well! I got my canned salmon from Costco too! :]!!

  22. Fantastic looking burgers, expecially with the guacamole and pico de gallo topping!

Could I substitute ground flaxseeds for the ground chia seeds? Or whole hemp hearts?

    1. I haven’t tried it with either, but I think it should definitely work with the ground flaxseeds! I make a vegan egg substitute with ground flaxseed and water and it works well as a binder in the past! :] I’m not entirely sure on the hemp hearts, but if you do try that out, please let me know!
