Originally, I was going to share a healthy ice cream recipe with you, but my blender had other ideas (it’s on strike), and I also don’t currently have any small, pretty bowls on hand to display ice cream in an attractive way, so…you get a spiffy snack instead!
Barlean’s Chocolate Silk Greens taste just like cocoa powder, and is both dairy and soy-free. You can mix it with water or milk and throw in fruit to make a delicious drink/smoothie! Or you can make this not-extremely-healthy-but-could-definitely-be-worse chex mix! Each scoop has 25 calories, with 4g carbohydrates and 1g protein!
Barleans also makes all kinds of other products, e.g. flax oils, fish oils, specialty oils, and swirls, so if you’re in the market for superfood supplements, this is where it’s at!

Chocolate Mint Chex Mix
Ingredients:
- 4 cups chex mix
- 3/4 cup mint chocolate chips
- 12 Andes mints, coarsely chopped
- 1 scoop of Barlean’s Chocolate Silk Greens
Instructions:
- Microwave 1/2 cup mint chocolate chips for 1 minute. Stir. Microwave in 30-second increments until mixture can be stirred smooth.
- Pour over chex mix and toss with Andes mints and Barleans Chocolate Silk Greens!
- Store in an airtight bag/container!

My life-recap is down here today, just to change things up!
- My Washington rotation has effectively been cancelled a second time. I am kinda upset because I was really looking forward to it, but can’t say I didn’t see it coming. They’re still offering me an interview though, so it’s a-okay!
- I went on my first interview earlier this week! My preceptor was watching the clock on Monday and eventually shooed me out after a couple hours, telling me to drive safely, and that he was sure they’d love me. I’m on the fence about writing a separate post for each interview experience right now, but for now, I’ll just say that it was a very positive experience and I’d like to think it went well! I spoke with both the program directors and one of the takeaway points from each of them…is that they think that me + powerlifting = awesome.
One of them asked me if I’d had a chance to check out their gym (which they provide a free membership to) was equipped enough to help me succeed for my goals to beat national records someday. Whatta kind and thoughtful soul! :D!
- One of my preceptor’s patients decided to hit on me yesterday. I was across the room and didn’t actually hear most of what he said, but the general gist of it (since the entirety of the staff heard) was that I should totally visit him before I leave (today’s my last day) because he owns a resort 4 miles down the road. I think I shall respectfully pass, good sir!

Oh interesting! My family loves Chex Mix but I don’t usually make it as my mom makes it and give them huge tubs full. I did recently buy a box of Chex with Pumpkin Spice Chex Mix for my oldest to make for her Halloween Sleepover/Party. Both girls love chocolate and mint and this would be a great version to make for the holidays!

This makes a handy little snack to have with you on those busy days when you suddenly realize you’re starving and the candy bars in the check out lane are screaming your name. Much easier to resist when you know you have a snack waiting in the car.

Yes indeed! :D I try to keep my car + my pockets stashed with healthy (or at least healthy-ish) snacks so I can save money and still eat relatively healthily when I’m on the go! :]

This is an intriguing combo. I have 2 or 3 delicious cookie recipes using Andes mints–I love them, but I never would have thought of mixing it in with chex!
