Why hello, m’friends! In the interest of saving money and using up stuff in our fridge (yay for no waste!), this week’s theme is Frugal Finds!
I got a loaf of bread for free from Kroger due to a “Free Friday” deal, and our chickens and ducks at Please Save A Cat are all sorts of awesome, so they provided the eggs! <3
I also found…
- 1 pound of white button mushrooms for $2.29
- 1 tub of Wholly Guacamole Three Chili guacamole for $1.45
- 1 10 oz. tub of mixed greens (baby spinach, arugula, kale) for 99 cents
We had red onion, mozzarella, turkey pepperoni and pasta sauce left over from another kitchen experiment, so I used those in here too! (You’ll get to see the fruits of our labor for that in about a month! :] )
4 Frugal Toast Variations
Guacamole Toast with Fried Egg
Ingredients:
- drizzle of EVOO
- 1 duck egg
- 1 slice of bread
- 2-3 tbsp guacamole
- drizzle of sriracha sauce
Instructions:
- Toast the bread.
- Fry the egg in a drizzle of extra virgin olive oil.
- Spread guacamole on toast and place fried egg on top.
- Drizzle with sriracha sauce.
Scrambled Omelette Toast
Ingredients:
- 1 slice of bread
- 2 eggs
- 1/4 cup red onions, diced
- 1/4 cup white button mushrooms, diced
- drizzle of sriracha sauce
Instructions:
- Toast the bread.
- Scramble eggs with onions + mushrooms (and spices + cheese, if desired).
- Place scrambled egg mixture onto toast and drizzle with sriracha.
Pizza Toast
Ingredients:
- 1 slice of bread
- 2-3 tbsp Newman’s Own Sockarooni pasta sauce
- mozzarella cheese, to taste
- turkey pepperoni
Instructions:
- Toast the slice of bread and spread pasta sauce over it.
- Top with cheese and pepperoni.
- Microwave for ~20 seconds or until cheese has melted.
Scrambled Egg Toast with Greens
Ingredients:
- 1 slice of bread
- 2 eggs
- red onion
- white button mushrooms
- handful of greens
- gazpacho (for topping)
Instructions:
- Toast the slice of bread and top with greens.
- Scramble eggs together with red onion and mushrooms. Place onto toast.
- Top with gazpacho!

All of these combinations look goooooooood! One of my favourite frugal toast combinations is vegemite and cheese :P I’m definitely a real Australian – though these days I have to have GF vegemite!

Who doesn’t love Pizza Toast! Quick and easy toaster oven pizzas are a fav in our house. We also make the open faced egg breakfast sandwiches and I’m loving your guac/egg/Sriracha combo!

Well, growing up it was cinnamon and sugar toast! lol! But toast is the only thing that hits the spot sometimes. Egg sandwich is quite good. Last night we had BLT with venison bacon…yum!

Yum! These all look delicious (and totally something I’ve made before!) It’s amazing how creative we can get when we’re getting into the “clean out the fridge” part of the week. The best part is it usually is delicious too!
